Chef Isabelle's Pre-Game Breakfast Burrito

Chef Isabelle's Pre-game sweet potatoes breakfast burrito

Ingredients:

-1 tablespoon of olive oil 

-1/2 cup of small cubes sweet potatoes, skin on 

-1/4 cup of water 

-1/4 cup of red onion or scallions 

-1/3 cup of black beans drained and rinsed 

-2 eggs or 3 egg whites 

-1/4 teaspoon of smoked paprika 

-3 sprigs of cilantro leaf only 

-5 cherry tomatoes

-1/2 avocados (more or less) 

-salt and pepper 

-2-4 tortillas/wraps of choice 

 

How too:

In a pan over medium high heat, add oil and sweet potatoes and sear for three minutes. Add water and stir. Let water evaporate to soften the potatoes. Add onions and black beans and continue to stir. Slowly add in the eggs and stir until visibly cooked. Add smoked paprika, salt and pepper to taste. Turn off stove and add, cut tomatoes, cilantro and cubed avocados. Add to the tortillas, fold and bonne appetit! 

Add ons/substitutions: Greek yogurt instead of sour cream, add cheese, or one tablespoon of flax meal. Even try adding bacon or sausage left overs etc.... put you’re twist on it and enjoy :)
